Across protein categories, the signals are shifting. What may look like short-term fluctuation is increasingly being driven by deeper structural pressures, from geopolitical disruption to supply constraints and changing consumer demand.

In beef, there are early signs of price stabilisation, with the French GBEA index easing slightly in recent weeks. Pricing still sits above the year’s opening average and well above historic levels. At the same time, demand is changing. Premium cuts such as steaks and roasting joints are slowing as spending tightens, while mince-based products remain more resilient. This is already influencing how dishes are priced, positioned and, in some cases, reconsidered altogether.

Pork presents a different picture. Prices are currently lower year on year, but this masks pressure within the supply base. Many European producers are operating at a loss, and structural changes are already taking place. Pig numbers in the Netherlands have fallen by 7.4 percent. As supply tightens and seasonal demand increases, pricing pressure is expected to return. What looks like a window of opportunity now may close quickly.

Poultry has traditionally offered stability, often acting as a dependable alternative when other proteins rise. That position is becoming less certain. Global production is forecast to grow modestly, yet the category is increasingly exposed to external pressures, particularly feed and fertiliser costs linked to geopolitical developments. This introduces a level of volatility that is likely to show up in future pricing.

In seafood, Atlantic cod prices have stabilised but remain significantly higher than a year ago. Other whitefish species are now seeing inflation come through as lower cost stock is replaced at current market prices. The effect is gradual, but noticeable, particularly where consistency and portion cost are key.

These shifts point to a broader change. Cost pressure is no longer isolated or predictable. It is continuous and harder to anticipate, with implications that reach beyond procurement into pricing, planning and overall commercial performance.
